Ingredients
•  12 large eggs
•  1 pound fresh asparagus, trimmed
•  4 tablespoons olive oil
•  1 cup mascarpone cheese
•  1 spring onion
•  1 teaspoon kosher salt
•  1 ounce Parmesan cheese, grated (optional)


Directions
•  Pre-heat oven to 375 degrees.
•  Clean spring onion and cut into ¼ inch pieces.
•  Chop off any ends of asparagus.
•  Using a skillet at medium-high, add 1 tablespoon of olive oil and asparagus and cook until crisp (2-3 minutes). Remove.
•  Reduce heat to medium and add 1 tablespoon of olive oil, spring onion, ½ teaspoon of salt to skillet. Stir and cook for 1-2 minutes.
•  Whisk together the eggs in a bowl and add ½ teaspoon salt.
•  Add eggs to skillet and then asparagus on top.
•  Sprinkle with grated Parmesan (optional)
•  Bake for 20-22 minutes.
•  Serve immediately.
