Tomato Pie

Ingredients
• 1 9-inch frozen pie crust.
• 3 large tomatoes, sliced ¼ inch
• 2 cloves garlic, minced
• ¼ cup fresh basil leaves, chopped
• ½ cup shredded mozzarella cheese
• ½ cup shredded cheddar cheese
• ¼ cup mayonnaise
• Salt and pepper
Directions
• Preheat oven to 425 degrees
• Bake pie shell 10 minutes. Remove and let cool.
• Reduce oven to 350 degrees
• Place tomato slices on a baking sheet. Sprinkle with salt. Let sit for 5-8 minutes. Pat out extra moisture.
• Place half of the tomatoes around the bottom of the pie crust.
• Add half of the garlic cloves, half of basil, half of cheddar and half of mozzarella.
• Starting with remaining tomatoes, add other layers.
• Apply mayonnaise over final mozzarella layer.
• Place in oven.
• Bake for 30-40 minutes until pie is lightly browned and cheese is melted.
• Let cool for 1-2 minutes before serving.
